  • 2 large egg yolks
  • 1/2 c. packed shredded sweetened coconut
  • 1/2 t. vanilla extract
  • 1 c. sugar
  • 2 c. half-and-half
  • 4 large eggs, lightly beaten
  • Finely diced fruits for garnish  (strawberries, mango and kiwi shown here)

Directions :

  1. Get the oven and preheat it until 350 degrees.
  2. In a small, heavy saucepan over medium-high heat, cook 1/2 c of sugar.
  3. Make sure the sugar become caramelizes and stirring constantly. But you have to take care not to let it get too dark.
  4. Now place the caramel into 8 custard cups. Then swirl the caramel around the cups to coat the sides.
  5. Prepare the medium size heavy saucepan. Set it into over medium heat.
  6. And heat the half- and half with the remaining 1/2 c of sugar to just below the scalding point.
  7. When you see the wisps of steam start to rise, remove fro heat and let it cool.
  8. Whisk eggs and egg yolk in a mixing bowl.
  9. Add in the cooled half-and-half a little at a time, alternating with small bits of coconut.
